These OREO Funfetto Cookie Bars are one of my favourite recipes because it follows a certain code that I've noticed I gravitate to a lot.
It's easy to make, comes together quickly and tastes amazing.
The perfect comfort food that also works well for parties, afternoon tea and morning coffee.
Why do we love this recipe so much?
It's like a checklist that goes off in my head every time I say it.
In this case, it goes: OREO (Check!), Funfetti (Check!), Cookie Bars (Check!!)
Just the sound of this sweet treat sets off all the bells and whistles in my head when I haven't even made it yet!
Now the words alone don't do it and there are lots of ways to make OREO Funfetti cookie bars, so these directions are just my personal favourite way to make this recipe come alive.
The secret to these cookie bars is the chopped-up OREO which adds better texture and integration with the Funfetti cookie batter at the same time.
Why Cookie Bars?
OREO Funfetti cookie bars are only one example of the types of things you can do with OREO cookies and Funfetti mix, but I like this way best.
First of all, for clarity, this is a from-scratch recipe (not counting the OREO cookies of course), which means that there is no Funfetti mix in the ingredients.
You make the "Funfetti" in the form of coloured sprinkles that you add to the batter while making it.
The recipe for the batter also contains ingredients that add a bit more complexity to the palate and a very nice texture that is ideal for cutting up and serving as delicious cookie bars.
A Cute Party Treat
Because of how festive and celebratory these OREO Funfetti cookie bars are, they are perfect for serving at a party or on a celebratory dessert table.
The Funfetti like sprinkles make it the perfect component to a birthday and you can ideally use it for a New Year party as well.
Mix up the colours to customize the cookie bars for other holidays such as Christmas, Valentine's Day, and St. Patrick's Day.
OREO Funfetti Cookie Bars Recipe
For the dish you will need a 9 inch x 13 inch cake pan, like this one, lined with parchment paper.
Ingredients
1 C / 227g unsalted sweet cream butter, melted
1 1/4 C / 251g sugar
1/2 C / 50g brown sugar, packed
2 eggs
1 egg yolk
2 tsp vanilla extract
2 1/2 C / 300g flour
2 tsp cornstarch
1/2 tsp baking powder
1 tsp salt
1/2 C / 85g chocolate chips
16 Oreo cookies, chopped
1/4 C / 50g coloured sprinkles
Directions
1. Preheat your oven to 350 degrees F / 177 degrees C.
2. Using a standing mixer or large mixing bowl, cream together the melted butter, sugar and brown sugar until combined.
3. Mix in the eggs and egg yolk one at a time, mixing well after each egg.
4. Mix in the vanilla essence.
5. In a medium bowl, stir together the flour, cornstarch, baking powder and salt.
6. Gradually fold the dry ingredients into the wet with a metal spoon until completely combined.
7. Stir in the chocolate chips and sprinkles.
8. Spread the batter into the baking dish and push in the chopped OREOs.
9. Bake for 40 minutes or until the edges just begin to turn a golden brown.
10. Allow to cool in the tin before cutting and enjoying.
