This is the perfect quick and easy Easter recipe to bake with the kids this weekend. All you need are basic supplies and no fancy equipment. We used the bright pastel little M&M Easter eggs, but you could use Cadbury Mini Eggs or similar. Just remember not to let under 3s have these eggs as they could be a choking hazard.
Easy Easter Fairy Cakes Recipe
Makes 12
Ingredients
100g butter
100g caster sugar
100g self-raising flour
1 level tsp baking powder
2 eggs
To decorate:
225g icing sugar
2-3 tbsp. warm water from the kettle
mini Easter eggs
Method
1. Place cake cases in a 12 hole bun tin, and preheat the oven to 200C/180C Fan.
2. Add all the cake ingredients to a large bowl, then beat well for 2-3 minutes until you have a smooth batter.
3. Share the cake batter between the 12 cake cases and bake for 15-20 minutes.
4. Remove from the oven when the cakes are well risen and a light golden brown.
5. After a couple of minutes, remove the cakes from the tin, and place on a wire rack to cool.
6. Once cool, mix the water into the icing sugar one tablespoon at a time until you have a thick paste.
7. Spread some on each cake, decorate with the mini eggs, then leave to set before serving.
