With not long to go now until Frozen 2 is out in cinemas worldwide, we have some Frozen-inspired treats for you. Whether you want to surprise the kids, create something gorgeous for Christmas parties, put on a delightful afternoon tea, or go all out and organise a Frozen party, these super cute Frozen inspired Minnie Mouse ears cupcakes will be a huge hit.
They're surprisingly easy to make too. Just make sure you have all of the ingredients and equipment ahead of time, then follow each stage carefully to make your gorgeous Frozen cupcakes.
Minnie Mouse Ears Frozen Cupcakes
1. White Chocolate Snowflakes
Ingredients
1 C Ghirardelli white chocolate melting chips / 175g white chocolate buttons in UK
1 reusable piping bag
1 cookie sheet lined with parchment paper
Directions
1. Melt the chocolate chips in a microwave on 30 second increments.
2. Scoop into a piping bag then pipe out about 20 thick snowflakes in different sizes.
3. Allow to dry overnight.
2. Fondant Ears
Ingredients
1 package of light blue fondant - buy in the UK
1 package of white fondant - buy in the UK
1 Wilton bow tie silicone fondant mold
1 mini circle fondant cutter
powder sugar /icing sugar to sprinkle
Directions
1. Sprinkle some powder / icing sugar onto a cutting board.
2. Roll out the blue fondant into 1/4 inch (5-6 cm) thickness and cut out 48 circles for the ears.
3. Powder your hands with powder sugar and mould the white fondant into a ball.
4. Pinch off 1 teaspoon size ball of fondant and press it into the bow mould. Make 22 bows.
5. Allow to dry overnight.
3. French Vanilla Cupcakes
Ingredients
1 box of french vanilla cake mix or make from scratch with this recipe
3 large eggs
1 C / 250ml whole milk
1/2 C / 115g unsalted sweet cream butter, softened
Light blue cupcake liners - buy in the UK
Directions
1. Preheat oven to 350F / 175C. Line cupcake pan with the cupcake liners.
2. Using a standing mixer, beat together all ingredients until combined.
3. Scoop the batter into cupcake liners to about 3/4 way full.
4. Bake cupcakes for 21 minutes then allow to cool completely.
4. Vanilla Frosting
Ingredients
3 C unsalted sweet cream butter, softened / 675g unsalted butter
6 C powdered sugar / 600g icing sugar
5-7 tbsp heavy whipping cream / double cream
2 tsp pure vanilla extract
Sky blue gel food colouring
Large piping bag with large star tip
White crystal sugar sprinkles - buy in the UK
Directions
1. Using a stand mixer combine the butter, powdered sugar, heavy whipping cream and vanilla. Mix on medium speed until combined and smooth.
2. Scoop about 1/4 C of frosting into a small bowl and set aside for later.*
3. Split the remaining frosting in half into two bowls.
4. Mix a few drops of sky blue food coloring into one of the bowls.
5. Scoop the blue frosting onto one side of the piping bag.
6. Scoop the white frosting onto the other side of the piping bag.
7. Pipe the frosting in swirls onto the cupcakes.
5. Decorating the cupcakes
1. Carefully add a dollop of the reserved frosting* onto the back of each snowflake then place them onto the blue circles.
2. Place a white bow into the middle of the frosting on each cupcake.
3. Place the ears on each side of the bows.
4. Sprinkle some of the white crystal sprinkles on top to give it a shimmer and serve.
