The end of July and into August is one of my favourite times of year, not least because it's my birthday. But because it's time for the first blackberry picking, handfuls of juicy black fruit grabbed from hedgerows, purple juice staining hands and lips. The girls get so excited to see the first blackberries, me too. When I can stop myself from eating every greengage I can find that is!
Whether you go out picking blackberries or buy some from the supermarket, this delicious iced tea you can make in the Instant Pot (best kitchen gadget ever!) is delicious and really refreshing. Enjoy!
Instant Pot® Blackberry Iced Tea
Tip: To reduce bitterness, add a pinch of baking soda prior to brewing and remove tea bags as soon as the pressure has been fully released.
Serves: 4-6
Ingredients
2 litres cold water
6 organic black tea bags
200g fresh blackberries
2 tsp fresh basil, chopped
170g honey, preferably local
125ml cold water
2 tsp fresh lemon juice
To garnish:
Fresh blackberries
Fresh basil sprigs
Method
1. Add 2l water, tea bags, and 100g blackberries to Instant Pot® and stir to combine. Add lid and lock into place. Switch the vent to 'Sealing' and set the 'Manual' setting to 5 minutes.
2. While the tea is brewing, add the remaining blackberries, basil, honey, and the remaining 125ml water to a saucepan set over a medium heat.
3. Cook, gently pressing on the blackberries to release their juices while continually stirring the mixture to combine, for 4-5 minutes.
4. Once the honey is completely melted and the mixture starts to thicken, remove from heat and set aside.
5. When cook time on Instant Pot® is complete, allow pressure to release naturally for 10 minutes, then do a quick release to release any remaining pressure.
6. Carefully strain the hot tea mixture with a fine mesh strainer. Pour the reserved liquid into a large, heat-resistant pitcher and sweeten with the blackberry honey simple syrup, to taste. Add the fresh lemon juice and stir to combine.
7. Serve immediately over ice with fresh blackberries and a sprig of fresh basil for garnish. Enjoy!
