Sometimes you just want something delicious, indulgent and fun to eat. Perfect in front of the game or as a snack before you cook dinner, these delicious aubergine fries are perfect vegan fast food fodder! Paired with a spicy tomato dip, they'll go down a treat with beers and friends on a night in or at a party. (Hint: save the spicy tomato dip idea for other party foods.)
Aubergine Fries with Spicy Tomato Dip
Aubergine fries
Ingredients
1 large aubergine, roughly 400g
300ml coconut milk
200g cassava or gram flour (plain flour is OK if you don't need it to be gluten free)
1 tsp cumin
1 tsp paprika
salt and pepper
Method
1. Cut the aubergine in half lengthways, and then cut again into strips.
2. Soak in the coconut milk for 10 minutes.
3. Season the flour and then toss the fries into the flour, ensuring they are all coated before dropping into a deep fryer. They may float so push them down or shake your basket to ensure they cook evenly.
Spicy tomato dip
Ingredients
1 onion, chopped
1 red pepper, diced
splash of white wine vinegar
1 clove garlic
1 small red chilli, sliced
1 tsp of tomato puree
2 tomatoes
paprika to taste
Method
1. Heat some olive oil in a frying pan or saucepan and sweat down all the ingredients, except the paprika, over a medium heat.
2. Add a sprinkle of salt, pepper and some paprika and then blitz with a hand blender or in a food processor.
