Being vegan doesn't mean you'll miss out at Christmas, as this delicious - and deliciously simple - recipe shows. The recipe is vegan, gluten-free and still good enough to put a smile on the face of any 'plum pudding' lover. Perfect for anyone who has made the change this year, or has vegan guests coming this Christmas.
Vegan Christmas Pudding
Ingredients
200g vegan margarine, melted
2tbsp black treacle
100g soft brown sugar
100g ground almonds
100g gluten-free flour
3tbsp baking powder
100g prunes, chopped
200g currants
100g Boozy Christmas Goupie, chopped
1 apple, grated
1 carrot, grated
3tsp mixed spice
1tsp ground ginger
1tsp cinnamon
1/2tsp nutmeg
1/2tsp salt
1 unwaxed lemon, juice and rind
Method
1. Mix all the ingredients together.
2. Pour into a pudding basin, cover with foil and tie with string.
3. Steam over a pan of simmering water for 3-4 hours.
4. Serve with Oatly Vanilla Custard mixed with a little Brandy, or other vegan sauce.
